<p> Job Title: Senior Associate – F&amp; B Operations </p> <p> Business Unit: RMZ Private Capital, F&amp; B Vertical </p> <p> Location: Bangalore, India </p> <p> Role Overview </p> <p> The Senior Associate – F&amp; B Operations is a part of core team responsible for operationalising every F&amp; B venture RMZ enters. This role takes approved concepts from launch through to live, P&amp; L-accountable, steady-state operation. </p> <p> The ideal candidate has run restaurants on the floor — managing the full operation day to day, not a single function. You own what happens on the ground: staffing, service standards, supplier management, compliance, inventory, and the daily controllables that determine whether a restaurant performs. Standalone restaurant experience is strongly preferred over hotel F&amp; B operations. </p> <p> Key Responsibilities Operational Execution Take approved F&amp; B concepts from launch into steady-state operation — opening readiness, staffing, SOPs, service standards, and supplier onboarding. Move fast through ambiguity — early-stage ventures require someone who can stand up an operation from scratch and run it independently. Day-to-Day Operations Management Own the operational controllables across RMZ’s F&amp; B units — labour, inventory, wastage, vendor performance, and service quality. Be hands-on and present where the work happens; this role lives in the detail of execution. Pre-Opening &amp; Launch Coordinate fit-out readiness, licensing and statutory compliance (FSSAI, excise, fire NOC, municipal), vendor appointment, and the pre-opening checklist alongside the VP / AVP. Manage pre-opening budgets and ensure handover from construction to operations is clean and on schedule. Cost &amp; Inventory Control Run procurement, inventory, and cost controls on the ground, feeding accurate operational data back into the P&amp; L. Run tight operational and cost discipline; catch problems on the floor before they reach the P&amp; L. Partner &amp; Operator Coordination Serve as RMZ’s operational point of contact with JV/franchise partners and on-site teams, ensuring delivery against agreed standards. Partner closely with the VP / AVP as the second half of a tight, accountable two-person team. Reporting Provide the leadership with reliable operational and cost reporting from the field. Maintain accurate records of daily controllables, vendor performance, and compliance status. </p><p> Skills &amp; Experience </p> 6–8 years as a restaurant manager with end-to-end operations responsibility — not a single function. Standalone restaurant operations experience is strongly preferred over hotel F&amp; B. Proven track record in pre-opening, staffing, and cost/inventory control. Hands-on and present where the work happens — this role lives in the detail of execution. Ability to stand up an operation from scratch and deliver steady-state performance independently. Strong vendor management, procurement, and compliance (FSSAI, excise, licensing) knowledge.
