Corvus Coffee Roasters is a Denver specialty coffee company built over fifteen years on direct relationships with farmers, careful roasting, and real hospitality. We run cafes, a roastery, a wholesale program, and a scratch bakery, and we’re now opening our seventh location.About the Fox & The RavenThe Fox & The Raven is our newest concept: a from-scratch restaurant built around a Corvus specialty coffee bar on South Broadway in Englewood. Our bakers mill heirloom grains in-house and use sourdough fermentation in everything from the breakfast menu to the brick oven pizza. We serve breakfast, lunch, and dinner, and in the evenings we add a full beer, wine, and cocktail program. Downstairs, a classroom hosts coffee and baking classes. We’re looking for the leader who will open it and run it.The RoleAs General Manager, you run the whole building. Every Fox & The Raven team member reports up through you: front of house, back of house, bar, and coffee bar. You own the full P&L, work with our Director of Culinary on food and bakery execution, and report to our Director of Retail on business performance and strategy. You’ll also lead the opening by hiring, setting up, and training the team that launches the restaurant.
What You’ll DoFinancial PerformanceOwn the full P&L, including revenue, cost of goods, labor, and controllable expensesBuild budgets and sales forecasts, and hit margin and profitability targetsReview daily, weekly, and period-end reports and act on what they showManage inventory, ordering, and vendor relationships across the coffee, kitchen, and bar programsTeam LeadershipLead every team member at the Fox & The Raven, across all daypartsRecruit, hire, train, schedule, and develop managers and hourly staffSet clear expectations, coach and evaluate performance, and handle HR matters with company HRBuild a stable culture where people stay, grounded in Corvus standards and valuesOperationsRun breakfast, lunch, and dinner service alongside the Corvus coffee barKeep our signature sourdough breakfast items and brick oven pizza consistent and excellentLead the beer, wine, and spirits program, including responsible service, liquor license compliance, and bar cost managementKeep the restaurant fully compliant with health department, food safety, and alcohol service regulationsDeliver a warm, consistent guest experience across the restaurant, bar, and coffee barPartnership and OpeningWork with the Director of Culinary on menu development, recipe standards, food cost, and the consistency of the sourdough programReport regularly to the Director of Retail on financial performance, operational health, and prioritiesLead pre-opening setup, staffing, and training through to a strong grand openingWhat You Bring5+ years as General Manager of a full-service restaurant with an active bar programA track record of owning a restaurant P&L, including budgeting, forecasting, and cost managementExperience running multiple dayparts (breakfast and brunch experience strongly preferred)Working knowledge of beer, wine, and spirits programs, including compliance and responsible serviceA plus: passion for or experience with specialty coffee, scratch baking, or pizza programsServSafe (or equivalent) and a Colorado alcohol service certification such as TIPS, or the ability to earn both soon after hireA history of building and keeping high-performing teams, plus strong communication and organizationAvailability for early mornings, evenings, weekends, and holidays as the business requiresCompensation & BenefitsSalary: $71,000 to $80,000, based on experience (full-time, exempt)Health, dental, and vision insurancePaid time off and paid holidays401(k) retirement planDining and coffee discounts at the Fox & The Raven and all Corvus cafesCorvus Coffee Roasters is an equal opportunity employer. xzbcwsv We celebrate diversity and are building an inclusive workplace for every team member.
