<p> Position Summary </p><p> The Hyatt Regency Dallas is seeking an experienced Chef de Cuisine to join our highly skilled and recognized Culinary team. Located in downtown Dallas adjacent to the iconic Reunion Tower, Hyatt Regency Dallas offers an exciting opportunity for a culinary leader seeking professional growth and career advancement within a world-class hospitality organization. </p><p> The Chef de Cuisine is responsible for leading and managing all culinary operations in collaboration with the Executive Chef and Executive Sous Chef. This role oversees four distinct food and beverage outlets, including the all-day dining restaurant, specialty restaurant, room service operation, and bar and lounge. The Chef de Cuisine will create, implement, and maintain a high-quality, consistent guest experience while driving culinary excellence, operational performance, financial results, and team development. </p><p> The ideal candidate brings inspiration, culinary expertise, creativity, knowledge of industry trends, menu development skills, and a passion for mentoring culinary talent. This position performs in a fast-paced, high-volume environment and plays a critical role in maintaining Hyatt's standards for quality, service, and guest satisfaction. </p><p> Responsibilities </p><p> Operations Management </p><ul><li> Develop and implement creative menu items, in collaboration with the Executive Chef and Executive Sous Chef, that align with Hyatt brand standards while meeting guest expectations and market trends. </li><li> Supervise the preparation, production, and presentation of food items to ensure the highest standards of quality, consistency, freshness, and flavor. </li><li> Establish and maintain standard operating procedures and culinary standards. </li><li> Plan, coordinate, and execute special events, holiday functions, catering support, and other hotel programming as needed. </li><li> Monitor equipment performance and coordinate repair and replacement requirements. </li><li> Ensure efficient communication and collaboration across departments. </li></ul><p> Team Leadership &amp; Development </p><ul><li> Lead, inspire, coach, and develop culinary colleagues to achieve exceptional guest service and colleague satisfaction. </li><li> Foster a culture of accountability, teamwork, professionalism, and continuous improvement. </li><li> Conduct hiring, onboarding, training, coaching, performance evaluations, and succession planning. </li><li> Manage scheduling, payroll, labor deployment, and staffing levels to support business demands. </li></ul><p> Financial Management </p><ul><li> Monitor and manage food production costs, purchasing, ordering, inventory, and quality controls. </li><li> Analyze food cost, labor cost, sales trends, inventory variances, and overall financial performance. </li><li> Support profitability goals while maintaining exceptional quality standards. </li></ul><p> Food Safety &amp; Compliance </p><ul><li> Ensure compliance with all local, state, company, and Hyatt food safety standards. </li><li> Maintain HACCP, sanitation, workplace safety, and health department compliance requirements. </li><li> Conduct routine inspections and implement corrective actions when necessary. </li><li> Ensure proper receiving, storage, labeling, and handling of all food products. </li><li> Maintain readiness for health inspections and operational audits. </li></ul><p> Qualifications </p><ul><li> Culinary Arts Degree preferred; previous hotel experience preferred. </li><li> Minimum 5-7 years of progressive culinary leadership experience, preferably in a hotel, resort, club, airport hospitality, or high-volume foodservice environment. </li><li> Demonstrated experience overseeing multiple outlets or complex culinary operations with in-depth skills and knowledge of all kitchen operations. </li><li> Experience with training, customer service, labor management, and basic financial management. </li><li> Strong understanding of food costing, inventory controls, purchasing, and labor management. </li><li> Proficiency in Microsoft Office, including Word, Excel, PowerPoint, and Outlook. </li><li> Strong leadership, communication, organizational, problem-solving and relationship-building skills. </li><li> A genuine desire to exceed guest expectations. </li><li> Ability to manage multiple priorities while maintaining attention to detail. </li><li> Full schedule flexibility, including evenings, weekends, holidays, and special events. </li></ul><ul><li> Ability to stand and walk for extended periods. </li><li> Ability to lift and carry up to 50 pounds. </li><li> Ability to work in varied kitchen environments with exposure to heat, cold, steam, and noise. </li></ul><p> Wellness and Benefits </p><ul><li> Free/discounted room nights, and friends &amp; family room rates at Hyatt locations worldwide. </li><li> Celebrations, colleague recognition programs, and volunteer opportunities. </li><li> Free nutritional colleague meals. </li><li> PerkSpot discounts at various retailers, including Apple, AT&amp;T, Verizon, and many more. </li><li> Free parking and discounted annual DART passes. </li><li> Full medical benefits beginning at 30 days of employment. </li><li>401(k) eligibility at 30 days of employment, with company match after one year. </li><li> Employee Stock Purchase Plan. </li><li> Paid vacation, holidays, sick days, and extended sick leave. </li><li> New child leave, paid family bonding time, and adoption assistance. </li><li> Tuition reimbursement programs. </li></ul><p> Hyatt Regency Dallas is an equal opportunity employer.
