This role takes approved concepts from launch through to live, P&L-accountable, steady-state operation. The ideal candidate has run restaurants on the floor - managing the full operation day to day, not a single function. You own what happens on the ground: staffing, service standards, supplier management, compliance, inventory, and the daily controllables that determine whether a restaurant performs.
